Orecchiette Pugliesi, Original recipe
Orecchiette is a homemade pasta based on remilled durum wheat semolina, water and salt, typical of the Apulia region in the shape of small ears, from which it derives the name, which in the dialect of some towns of the Brindisi area takes the epithet of stacchioddi. The perfect recipe is orecchiette with cime di rapa (turnip tops) or meat sauce (meatballs and brasciole) or tomato sauce and strong flavour sheep cheese. Apulia: Queen of the summer
In 2016 the Apulia region was chosen by 3.7 million tourists for their holidays, with numbers exceeding 14 million for an average of four-night stay. The number of foreign tourists has increased, with 16% increase in arrivals and 12% in attendance, with an international growth rate close to 23%.
